Directions

  1. Preheat oven to 400 degrees. Season both sides of chicken with salt and pepper to taste (I go light on salt and heavy on pepper).
  2. Heat olive oil in large pan to med-high heat. Add the chicken and cook for 3-5 mins per side until browned. Transfer to oven safe dish coated in cooking spray.
  3. Mix rosemary, melted butter, garlic, chicken broth, and lemon juice. Pour over chicken.
  4. Bake for 25 mins or until chicken is cooked through. At least 165 degrees on meat thermometer.
  5. Spoon the pan sauce over the chicken, garnish with parsley and lemon slices.
