- Preheat oven to 400 degrees. Season both sides of chicken with salt and pepper to taste (I go light on salt and heavy on pepper).
- Heat olive oil in large pan to med-high heat. Add the chicken and cook for 3-5 mins per side until browned. Transfer to oven safe dish coated in cooking spray.
- Mix rosemary, melted butter, garlic, chicken broth, and lemon juice. Pour over chicken.
- Bake for 25 mins or until chicken is cooked through. At least 165 degrees on meat thermometer.
- Spoon the pan sauce over the chicken, garnish with parsley and lemon slices.
