Ingredients

  • Egg

    Whole, fresh eggs

  • Lettuce

    Romaine or cos, raw

  • Tuna

    Fish, light, canned in water, drained solids

Directions

  1. Place eggs in a pot and cover with water. Bring to a boil, remove from heat, cover, and let sit for 10 minutes. Peel and shell eggs.
  2. Tear the leaves of the lettuce, wash, and drain in a salad spinner or with a paper towel. Spread the leaves over the bottom of the serving bowl.
  3. Add drained and shredded tuna to the bowl.
  4. Top with hard-boiled eggs, mayonnaise, and freshly chopped spring onion.
  5. Drizzle with extra virgin olive oil and lemon juice. Enjoy!
