Directions

  1. Spray instant pot from inside with cooking spray.
  2. Place chicken into the instant pot.
  3. In a small bowl, whisk together soy sauce, ginger, pepper, garlic, onion, rice vinegar and honey. Pour over the chicken.
  4. Seal pot with lid and cook on high pressure for 15 minutes.
  5. Release pressure using quick release method then open the lid.
  6. Remove chicken from pot and using forks to shred the chicken.
  7. Whisk together cornstarch and water to pour into the pot.
  8. Set pot on Sauté mode and stir until sauce is thickened.
  9. Return shredded chicken into the pot, stir well and serve.
