Directions
- Finely grate the Parmesan cheese.
- Cook the bacon in a large nonstick skillet over medium-high heat until crisp. Transfer to paper towels and reserve the skillet with drippings.
- Melt the butter in an extra-large nonstick skillet over medium heat. Add 4 slices of bread and top each with 2 slices of provolone cheese. Sprinkle with black pepper and cook until the cheese melts, about 3 to 4 minutes.
- Meanwhile, heat the reserved skillet with drippings over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2 to 3 minutes.
- Set 6 bacon slices and 2 eggs atop each of 2 cheese toasts. Top the eggs with onion, Parmesan, and basil, then place the remaining bread slices on top, cheese side down. Cut the sandwiches in half and serve.
