  1. Cut plantains into 1/2-1" pieces at an angle. Fry in a generous amount of oil on medium-high heat. Once the first side has caramelized to the desired amount (brown, slightly black makes for sweeter plantains), flip pieces with tongs and caramelize other side. Transfer pieces to plate covered with paper towels to get rid of excess oil.
  2. Serve with sour cream to dip in.
