- Zest 2 tablespoons of peel from the limes. Preheat oven to 400°F (200°C). Place six 3/4-cup soufflé dishes on a baking sheet.
- In a small bowl, mash together the sugar and lime zest. Place the chopped chocolate in a medium bowl set over a saucepan of simmering water and stir until melted. Remove from the heat and whisk in the egg yolks, salt, and 2 tablespoons of the lime sugar mixture. The mixture will become thick.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add 2 tablespoons of the lime sugar mixture and beat until stiff but not dry. Whisk 1/3 of the beaten egg whites into the chocolate mixture to lighten it. Gently fold in the remaining egg whites in 2 additions. Fold in the chocolate chips. Spoon the mixture into the prepared soufflé dishes, dividing equally.
- Bake until the soufflés are softly set and puffed, about 14 minutes.
- While the soufflés are baking, in a medium bowl, whip the heavy cream, lime juice, and remaining 4 tablespoons of lime sugar mixture until peaks form.
- Top the soufflés with the whipped cream mixture and sprinkle with additional lime sugar, if desired.
