  1. Heat the olive oil in a large, lidded frying pan over high heat. Add the chopped onion and cook for a few minutes until softened. Stir in the curry powder, ginger, and garlic, and cook for another 1-2 minutes until fragrant.
  2. Stir in the diced tomatoes, chickpeas, and season with salt and pepper. Cook for 8-10 minutes until the mixture thickens slightly.
