- Slice cucumbers about ¼ inch thick and add to a bowl.
- Thinly slice a red onion and add to bowl.
- Add apple cider vinegar, garlic, fresh thyme, and 2 pinches of stevia to a blender and blend to smooth consistency.
- Pour vinegar mixture over the ingredients in the bowl.
- Toss and let sit overnight (it’s good right away, but it tastes even better when the ingredients hang out together for awhile). Toss a bit before serving.
