Ingredients
- Canola oil

Directions
- Place the chicken on a cutting board and cover with plastic wrap to prevent splatter. Use a mallet or rolling pin to gently pound the chicken to an even thickness (about 3/4-inch thick). Slice each chicken breast in half to create two pieces each. Season with salt and pepper.
- Heat the canola oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook until golden brown on each side and cooked through, about 5-7 minutes per side.
- While the chicken cooks, roughly chop the spinach and artichoke hearts. Mince the garlic.
- Remove the chicken from the skillet and cover to keep warm. Add butter and minced garlic to the skillet, sauté over medium heat for one minute until the garlic softens.
- Add chicken broth to the skillet, stirring to dissolve browned bits. Add cream cheese and sour cream, whisking until smooth. Stir in milk until smooth again.
- Add Parmesan, red pepper flakes, and black pepper to the skillet. Heat and whisk for a couple of minutes. Stir in spinach until wilted, then add artichoke hearts.
- Return the chicken to the skillet and spoon the creamy spinach artichoke sauce over top. Serve hot.
