- Melt butter in a large pot over medium heat. Add the chopped onion and sauté until soft but not browned, about 3-4 minutes. Stir in the flour and cook for another minute.
- Add the chicken broth, water, carrots, garlic, celery, brown rice, and chicken thighs. Cover and simmer for 20 minutes.
- Add the wild rice and mushrooms, and simmer on low, covered, for 25 minutes, stirring occasionally.
- Remove the chicken from the pot, shred with two forks, and return to the pot. Stir in the sour cream and add more water if the soup is too thick.
