- Pound chicken. In bag, mix flour, salt, pepper. Mix chicken in and coat completely. Cook chicken in skillet with olive oil. Remove chicken. Scrape pan. While heat is off, add wine to pan. Once wine has evaporated to about 2 teaspoons add 3/4 cup broth. Whisk remaining broth with arrowroot powder. Add to pan and bring to a simmer. Reduce heat to low and add lemon juice and capers. Add chicken back to pan. Turn off heat and add butter and parsley.
