Directions

  1. Season both sides of the chicken breast with salt, pepper, and any herbs or spices you like. Heat a large skillet over medium-high heat. Once the pan is hot, add the olive oil and chicken, letting it cook for 5 minutes per side, until it is fully cooked at an internal temp of 165°F.
  2. Let the chicken rest for a few minutes, and then chop it into smaller pieces for the sandwich.
  3. Whisk an egg briefly in bowl and then pour into the same skillet to cook.
  4. Once it is starting to cook (not liquid) cover half of the egg with cheese, followed by avocado and chicken.
  5. Fold over other side of egg over on top of filling.
  6. Add egg and filling onto a slice of bread top with the remaining slice.
  7. Finish with optional salt and pepper dash, or some hot sauce.
