- Season both sides of the chicken breast with salt, pepper, and any herbs or spices you like. Heat a large skillet over medium-high heat. Once the pan is hot, add the olive oil and chicken, letting it cook for 5 minutes per side, until it is fully cooked at an internal temp of 165°F.
- Let the chicken rest for a few minutes, and then chop it into smaller pieces for the sandwich.
