Directions

  1. Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish with olive oil.
  2. Quarter the cauliflower, remove the leaves and stem, and cut away the core. Chop into bite-sized florets.
  3. Boil 3 quarts of water, add salt, and cook cauliflower for 2 minutes. Drain and rinse with cold water.
  4. In a hot sauté pan, add olive oil and sausage. Cook until browned and crispy, then drain excess fat.
  5. Add onion, garlic, and thyme to the pan. Sauté for 5-6 minutes, then add crushed tomatoes and season with salt and pepper.
  6. Combine the sauce with cauliflower and spread in the baking dish. Top with bread crumbs and Parmesan, drizzle with olive oil.
  7. Bake for 25 minutes until breadcrumbs are browned and sauce is bubbling. Let stand for 5 minutes before serving.
