Directions
- Preheat the oven to 425°F.
- Coat the cubed butternut squash in one-third of the olive oil and season with salt. Bake for 40-50 minutes until soft and lightly caramelized.
- Heat the remaining olive oil in a pan over low-medium heat. Sauté the garlic, stirring frequently to prevent burning. Add the chili flakes and cook for another minute or two.
- Cook the spaghetti for a minute less than the package instructions.
- Mash half of the roasted butternut squash with a fork or potato masher. Add both mashed and whole squash chunks to the pan with the chili and garlic.
