Directions
- Heat olive oil in a large skillet over medium-high heat.
- Add onions and jalapenos, cooking until onions are translucent, about 4-5 minutes. Add garlic and cook for another 1-2 minutes.
- Add butternut squash, salsa, chili powder, cumin, coriander, salt and pepper to taste, water, and two-thirds of the fresh cilantro. Cover and cook over medium-low heat until squash is tender, about 25-30 minutes. Stir in black beans.
- Preheat oven to 400°F and position a rack in the center.
- Spread 1/4 cup of enchilada sauce on the bottom of a large baking dish. Arrange tortilla strips to cover the surface.
- Spread half of the filling over the tortillas, top with half of the remaining enchilada sauce, and then half of the cheese. Repeat with another layer of tortillas, the remaining filling, enchilada sauce, and cheese.
- Bake the casserole for 10-15 minutes or until the cheese melts.
- Serve topped with scallions, remaining cilantro, and sour cream.
