- Heat oil in a large non-stick frying pan over a medium heat. Add the onion, garlic, ginger and cumin and cook for 2 minutes until fragrant. Add the chicken and cook for a further 2 minutes.
- Mix in the chicken stock, brown rice pocket, frozen peas, broccoli, lemon zest and lemon slices. Cook for 4-5 minutes, stirring occasionally, until the chicken is cooked through and the broccoli is tender.
- Serve between two bowls and top with some cracked black pepper.
