Directions
- Heat a skillet over medium heat and spray with non-stick spray. Add the sausage (without casing) and cook until browned and no longer pink. Remove from the pan, reserving the grease.
- In the same pan with the reserved grease, add the beaten eggs and scramble until firm and cooked through. Remove from the pan and set aside.
- Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside.
- Working one at a time, place a tortilla on a work surface. Add eggs, sausage, sun-dried tomatoes, avocado, and cheddar cheese to the center. Roll the tortilla tightly over the filling. Repeat with remaining tortillas and filling.
- Place the taquitos seam-side down on the prepared baking sheet and bake until crisp and the cheese has melted, about 12-15 minutes.
