  1. Preheat the oven to 350°F.
  2. In a bowl, mix the mayonnaise for tartar sauce, pickle relish, parsley, capers, lemon juice, sugar, and salt. Let sit for at least 10 minutes.
  3. Spread the breadcrumbs on a tray, spray with oil, and bake for 3-5 minutes until golden. Transfer to a bowl.
  4. Prepare a baking tray by cleaning and spraying it with oil.
  5. Cut the fish fillets into pieces slightly larger than the buns. In a bowl, mix the egg, mayonnaise for batter, mustard, flour, salt, and pepper.
  6. Coat the fish in the batter, then in breadcrumbs, pressing to adhere. Place on the prepared tray and bake for 12-15 minutes until cooked through. Top with cheese immediately.
  7. Cut the buns in half and toast or microwave them for 20 seconds to warm.
