Directions
- Preheat oven to 350°F. Lightly spray a medium loaf pan with cooking spray and line the base with parchment paper.
- Cream margarine and sugar in a large mixing bowl. Add eggs.
- Mash the bananas and add to the mixture. Add the buttermilk and combine well.
- Sift flour, baking soda, and cinnamon together. Add oat bran and stir to combine. Fold in to the banana mixture.
- Pour batter into the loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Let stand outside the oven for five minutes before turning onto a wire rack.
- Slice into ten evenly-sized pieces. Store in an airtight container unrefrigerated for up to four days.
