  1. Preheat oven to 350°F. Lightly spray a medium loaf pan with cooking spray and line the base with parchment paper.
  2. Cream margarine and sugar in a large mixing bowl. Add eggs.
  3. Mash the bananas and add to the mixture. Add the buttermilk and combine well.
  4. Sift flour, baking soda, and cinnamon together. Add oat bran and stir to combine. Fold in to the banana mixture.
  5. Pour batter into the loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Let stand outside the oven for five minutes before turning onto a wire rack.
  6. Slice into ten evenly-sized pieces. Store in an airtight container unrefrigerated for up to four days.
