Directions
- Cut the bacon into 1/2-inch pieces. Peel and halve the onion, then slice it crosswise. Remove stems and coarsely chop the Swiss chard.
- Cook the linguine in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally. Drain and reserve 1 cup of the pasta cooking liquid.
- Meanwhile, cook the bacon in a large pot over medium heat until it begins to crisp, about 10 minutes. Transfer to paper towels to drain. Drain all but 2 tablespoons of bacon drippings from the pot.
- Add the onion to the pot and sauté over medium-high heat until softened, about 7 minutes. Add the Swiss chard, sprinkle with salt and pepper, and add the reserved pasta cooking liquid. Toss until the chard is wilted and tender, about 4 minutes. Sprinkle with balsamic vinegar and cook for 1 minute.
- Add the linguine and olive oil to the pot and toss to coat. Transfer to a large bowl and sprinkle with bacon and Parmesan cheese. Season to taste with salt and pepper.
