  1. Beat whole egg in separate bowl.
  2. Pour half the beaten egg in with Bisquick mix. Add the milk, baking powder, cinnamon, and vanilla; stir.
  3. Add blueberries to pancake mix and stir. (Feel free to substitute blueberries for a filling of your choice).
  4. Heat pan over med-low heat and spray with non-stick cooking spray.
  5. Pour 1/4 cup of pancake mix in pan. Wait till bubbles rise to top, then flip and cook other side. Spray pan with cooking spray again, and repeat for the second pancake.
  6. Top with your favorite pancake toppings.
