- Purée about 5-6 medium shrimp, majority of scallions, and the bell pepper in a food processor. Chop remaining shrimp and mix together with purée, breadcrumbs, and egg whites. Form into 4 patties and refrigerate for about a hour.
- Heat oil in a pan over medium-high heat. Add patties and cook about 5 minutes per side until patties are cooked through and golden brown. Enjoy!
