Directions
- Boil pasta until al dente according to package directions.. Rinse with cold water and drain well.
- Heat oil in a skillet over medium heat. Fry onion, celery, pepper, and garlic clove until tender.
- Add curry powder and cook for about 2 minutes. Remove from heat.
- Cut peaches in bite-sized bits and add with it's juice to the onion mixture.
- Add mixture to pasta and stir through.
- Add mayonnaise and season with salt and pepper.
- Chill for at least an hour before serving. Garnish with walnuts. Enjoy!
