  1. Preheat oven to 325°F (163°C).
  2. Smash 5 to 6 garlic cloves. Gather 4 bay leaves and a large piece of heavy-duty aluminum foil.
  3. Allow the brisket to sit out of the fridge for approximately 20 minutes prior to cooking. With a sharp knife, trim any excess fat. Pat the brisket dry with a paper towel to remove any excess moisture and ensure a good sear. Season generously with approximately 1 tablespoon each of salt and pepper.
  4. Coat the bottom of a large pan with olive oil and heat over high heat. Once the oil is hot, sear the brisket for approximately 5 minutes per side. Remove the brisket from the pan and place it on the aluminum foil.
  5. Place half of the smashed garlic cloves and bay leaves on the bottom of the brisket and the other half on top. Tightly wrap the brisket in the aluminum foil, folding in the ends to seal in the juices.
  6. Place the wrapped brisket in a baking dish and bake for 3 hours, flipping 1-2 times during cooking.
  7. Remove the brisket from the oven and let it rest for approximately 40 minutes before unwrapping, slicing, and serving.
