  1. Cook rice according to package directions.
  2. While rice is cooking chop bell pepper and slice avocado. Set aside.
  3. When rice is done cooking, crack egg into a bowl and scramble with a fork. Add eggs to a nonstick cooking pan and cook over medium-low heat, stirring frequently until egg is scrambled and cooked through.
  4. Combine cooked rice, egg, bell pepper, avocado and salsa in tortilla. Wrap up and serve.
  5. Enjoy!
