Ingredients

Directions

  1. Rinse and finely dice all the veggies. A food processor is super helpful for this job, as you'll need about 2 cups of each vegetable.
  2. Pour olive oil into a large skillet or pan over medium heat. Add carrots and saute for 2-3 minutes.
  3. Add garlic and remaining veggies. Stir frequently (don't let garlic burn).
  4. Dissolve bouillon in 1/4 cup hot water. Add a small amount at a time to veggies.
  5. Continue sauteing until veggies are soft but not mushy.
  6. Remove veggies from pan, set aside.
  7. In the same pan, add Impossible Burger meat, break apart into crumbles, cooking over medium-high heat. Stir to brown evenly.
  8. Dissolve bouillon in 1/4 cup hot water. Add a small amount at a time to vegan meat.
  9. While vegan meat is cooking, add 3 tablespoon red wine. Stir meat, don't let it burn.
  10. When vegan meat is fully browned, add vegetables and stir to combine.
  11. Add marinara sauce. Stir to combine. Simmer for 2-3 minutes more.
  12. Add additional marinara, bouillon or water if needed to adjust consistency of sauce.
  13. Remove from heat.
  14. Sauce is ready to be used.
