Directions

  1. Grind the pressed tofu using a food processor or mash it with a fork. Set aside.
  2. Heat olive oil in a large saucepan over medium-high heat. Add the finely chopped onion, diced celery, diced carrots, and salt. Cook until the vegetables begin to soften, about 15 minutes, adding more oil if necessary.
  3. Add the ground tofu, soy sauce, brown sugar, minced garlic, basil, oregano, crushed red pepper flakes, and diced tomatoes to the saucepan. Bring to a boil and then simmer gently, stirring and scraping the bottom of the pan regularly, for 45 minutes.
  4. Uncover and continue cooking for 30 minutes or until the sauce thickens. Season with salt and pepper to taste.
  5. While the sauce finishes cooking, prepare the pasta according to the package directions.
  6. Serve the tofu bolognese over the cooked pasta.
