Directions
- Preheat oven to 350 Degrees Fahrenheit.
- Grind sunflower seeds to medium-fine in a food processor. Mix in wheat germ (2 tbsp) and salt, and set aside. You could also grind the sunflower seeds by hand or in a clean coffee mill if so inclined.
- Use the food processor (don't bother washing) to chop the celery, onion and green pepper, then grate in the carrot. Add the remaining ingredients, including the sunflower seed mixture, and pulse a few times in the food processor, just until combined.
- Shape the mixture into patties, and place on an oiled baking sheet. Bake for 15 minutes per side, or until brown. These can also be made as meatballs or as a shallow meatloaf.
- If you don't have a food processor, this can also be chopped and mixed by hand, with no detrimental effects.
