  1. Preheat the oven to 425°F.
  2. Melt the butter in a heavy-bottomed sauté pan over medium heat. Add the onions and sauté until translucent, about 10-12 minutes.
  3. Stir in the flour and nutmeg, cooking for 2 more minutes. Gradually add the milk, cooking until the mixture thickens, about 5-7 minutes.
  4. Squeeze excess liquid from the spinach and add it to the sauce. Mix in 1/2 cup of the Parmesan cheese. Season with salt and pepper.
  5. Transfer the mixture to a large baking dish. Sprinkle the remaining Parmesan and Swiss cheese on top.
  6. Bake for 20 minutes until hot and bubbly. Serve hot.
