- Feta cheese
⅔ cup, crumbled or 100g
Directions
- Preheat oven to 400 degrees F.
- Prepare penne as per package directions, but only for half of the suggested cook time. Reserve 1/2 cup of pasta cooking water before draining.
- Add chopped frozen spinach, mix well. Combine feta, dill, ricotta, and salt. Combine with pasta/spinach and the 1/2 cup liquid.
- Spread evenly in 3 qt baking dish. Top with mozzarella cheese
- Cover with foil and bake for 25 minutes. Uncover and bake for 10 more minutes.
