Directions
- Preheat oven to 425°F with the rack in the center. Lightly spray muffin tins. Cook pasta according to package directions, reserving 1/2 cup of cooking liquid. Avoid breaking spaghetti.
- Combine cottage cheese and cheddar cheese in a bowl. Toss cooked pasta with olive oil, garlic salt, pepper, turmeric, and paprika. Add reserved cooking liquid as needed. Mix with cheese mixture, reserving some cheese for topping.
- Twirl spaghetti into nests and place in muffin tins. Top each nest with the remaining cheese mixture. Bake for about 10 minutes until lightly browned and crispy.
- Let cool for a few minutes before gently removing from tins. Serve topped with parmesan and optional dried basil or parsley.
