Ingredients
- Coconut oil

Directions
- Dice onions and peppers.
- Heat a sauté pan over medium-high heat. Add coconut oil and melt. Once hot add the peppers and onions and cook for 5-7 minutes, or until tender. Reduce heat to medium.
- Put Spinach in pan and a pinch of salt and let simmer.
- Beat eggs in bowl and then slowly pour over mixture into pan; add a dash of cayenne pepper and black pepper.
- Sprinkle cheese over top and cook until cheese has melted and eggs are set. Enjoy!
