  1. Preheat oven to 300F (150C). Line two baking sheets with baking paper.
  2. Cut tomatoes in half, lengthwise. Roma tomatoes work well here too. Arrange cut side up in a single layer on baking sheet.
  3. Sprinkle with thyme. Then sprinkle liberally with salt and pepper. Drizzle with olive oil.
  4. Bake until tomatoes are shriveled and lightly golden, about 1.5 hours.
  5. Let tomatoes cool and serve at room temperature.
