Directions
- Bring water and uncooked quinoa to a boil in a saucepan. Reduce heat and simmer for 15 minutes or until water has been absorbed and the quinoa is tender. Remove from heat, let cool for 5 minutes, then fluff with a fork. Refrigerate until cool, optionally overnight.
- Heat half of the coconut oil in a large non-stick skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes until done. Transfer shrimp to a plate and set aside.
- In the same skillet, add the remaining coconut oil. Sauté onion, garlic, and ginger until fragrant, about 4-5 minutes. Add frozen veggies, cook until heated through. Stir in cooked quinoa and shrimp, then add tamari, sesame oil, and chili sauce. Cook for 2 minutes until evenly coated.
- Make a well in the center of the quinoa mixture. Pour eggs into the well; cook and stir until scrambled and fully cooked, about 2-3 minutes. Garnish with cilantro and a little sriracha, if desired.
