  1. rinse the sabudana (tapioca pearls) twice, and soak in water overnight (add water only to the surface of pearls not more.
  2. Roast The Peanuts. you can also crush them after. or pulse to a coarse powder. Cube And Boil The Potatoes.
  3. add the peanut (/powder) to the tapioca + salt + sugar.
  4. in a large pan add ghee (or oil). splutter cumin and curry leaves. add ginger (finely chopped), chilli (chopped) and potatoes (cubed). fry till potatoes turn slightly golden.
  5. add tapioca peanut mixture and mix gently.
  6. cook till sabudana turns translucent. add lemon juice and cilantro.
