Directions

  1. This recipe is easily customized. Add or subtract after you are comfortable with the base recipe. Pay attention your first time cooking to avoid burning the potatoes.
  2. Chop potatoes and onions, add to large bowl.
  3. Add seasonings and oil, combine using hands until they are all covered.
  4. If it is warm the coconut oil will be liquid, if it is cold, it will be solid. If solid just scrape some and put it on top before putting in oven.
  5. Add seasoned potatoes to lined baking sheet.
  6. Place in preheated (400 degree) oven for 45 minutes to an hour.
  7. Serve hot.
