Directions

  1. Preheat oven to 450°F.
  2. Prep chopped onions, garlic, and mushrooms. Set aside butter.
  3. Season chicken with salt and pepper, to taste.
  4. Heat a cast iron skillet over medium-high and coat with oil. Cook mushrooms and onions until glassy. Add in garlic and cook a few more minutes. Push vegetables to the side.
  5. Add chicken breasts to pan and cook until browned. Top with onions and mushrooms. Drop butter into pan and baste over chicken.
  6. Move to oven and cook for an additional 20 minutes or until internal temperature of chicken has reached 165°F.
