- Preheat oven to 450°F.
- Prep chopped onions, garlic, and mushrooms. Set aside butter.
- Season chicken with salt and pepper, to taste.
- Heat a cast iron skillet over medium-high and coat with oil. Cook mushrooms and onions until glassy. Add in garlic and cook a few more minutes. Push vegetables to the side.
- Add chicken breasts to pan and cook until browned. Top with onions and mushrooms. Drop butter into pan and baste over chicken.
- Move to oven and cook for an additional 20 minutes or until internal temperature of chicken has reached 165°F.
