Directions
- Finely chop tarragon and chives.
- Position rack in center of oven and preheat to 450°F. Line a large rimmed baking sheet with parchment paper.
- Mix lemon juice, tarragon, chives, brown sugar, Dijon mustard, and lemon peel in a medium bowl. Season mustard sauce with salt and pepper.
- Place salmon, skin side down, on the prepared sheet. Spoon 1/2 cup mustard sauce atop salmon, then spread over, covering completely. Sprinkle with salt and pepper.
- Roast until salmon is opaque in center, about 15 minutes. Transfer salmon to a platter using parchment. Cut into pieces and serve with remaining mustard sauce.
