  1. Preheat oven to 450 degrees F.
  2. Dice pumpkin into small cubes, mix with cinnamon, chili powder, and olive oil. Spread onto a sheet pan and roast in the oven for about 30 minutes or until tender.
  3. Spray frying pan with oil, fry diced onion until it starts to become see-through, add turmeric and paprika and fry for another 30 seconds to become fragrant.
  4. Add pre-roasted pumpkin, spreading in an even layer. Crack in 2 eggs, and top with feta cheese and fry until eggs are set.
  5. Serve and enjoy!
