Directions

  1. Soak cashews in water for 2 hours. Prep beet by peeling and slicing it.
  2. Blend dates and almonds together and spread evenly into a 6-7" round pan. Press down a bit to form the crust.
  3. After almonds have soaked, blend together remaining ingredients until a smooth consistency is reached. Pour into pan, over crust. Refrigerate for 8 hours or overnight. Sprinkle with coconut before serving. Enjoy!
