Directions
- Microwave frozen spinach in microwave safe bowl for about 4 minutes to defrost it.
- Put the defrosted spinach into a colander and press out all the liquid. (Careful- it may be hot.)
- Heat 1 tablespoon of olive oil over medium heat in a large skillet.
- Add in the chopped onions, reconstituted mushrooms, and salt and pepper to taste. Saute until liquid has evaporated and onions have softened.
- In a blender or using a hand blender, blend together coconut milk, celery, and cilantro.
- Place ground pork in a large bowl and add the spinach, the puree, mushrooms and onions, eggs, coconut flour (start with 1/8 of a cup), fish sauce, salt and pepper. Gently combine all the ingredients.
- Form the mixture into small patties (about 2 inches diameter).
- Heat coconut oil in a skillet over medium heat (oil should make a thin layer). Fry sliders in batches, 3 minutes on each side or until cooked through. Enjoy!
