  1. Beat the combined eggs and egg whites until well mixed
  2. Set a medium width pan at medium heat and add oil
  3. Pour batter and let cook until surface is slightly firm but still wet, about 30-45 sec
  4. With a wide spatula, flip over like a pancake and cook for 30 seconds.
  5. Alternatively, using a spatula you may flip one side and fold the omelette. After folding, flip to other side and let cook for 45 sec.
  6. Plate, salt and pepper to taste, and enjoy
