Directions
- Beat the combined eggs and egg whites until well mixed
- Set a medium width pan at medium heat and add oil
- Pour batter and let cook until surface is slightly firm but still wet, about 30-45 sec
- With a wide spatula, flip over like a pancake and cook for 30 seconds.
- Alternatively, using a spatula you may flip one side and fold the omelette. After folding, flip to other side and let cook for 45 sec.
- Plate, salt and pepper to taste, and enjoy
