  1. Coarsely grate the cheddar cheese. Rinse and finely dice the red bell pepper.
  2. Preheat the broiler.
  3. In a bowl, stir together the mayonnaise, cheddar cheese, red bell pepper, cayenne pepper, and salt to taste.
  4. Slice the sourdough bread crosswise into 1/3 inch thick slices and spread each slice thickly with the cheese mixture.
  5. Broil the toasts 5 to 6 inches from the heat until the cheese is bubbling and browned, about 2 minutes.
