- Wash and cut the chicken breast in bite size. Place in a bowl, and season with salt and pepper to taste. Preheat pan to medium high heat, coat with cooking spray and add the chicken. Cook until golden brown on all sides. This should take about 8- 10 minutes depending on the cut size.
- While chicken is cooking, make the pesto sauce by adding all ingredients to a blender, and blend to a smooth saucy consistency. Set aside.
- Boil gnocchi for 3 minutes until they start floating to top of the pot. Drain from water and transfer into pan with chicken and Add in the pesto sauce and peas, mix well combined. Cook for another 3-5 minutes until peas are cooked. Remove from heat
- Serve with additional 1- 2 TBSP of parmesan cheese (optional)
