  1. Preheat the oven to 450°F.
  2. Peel and cut the carrots and sweet potato into fries. Dust with a little taco seasoning, layer on a baking tray, drizzle with olive oil, and bake for 15-20 minutes. Turn on the broiler and bake for an additional 5 minutes to crisp.
  3. Heat olive oil in a pan, add chicken strips, and sauté until no longer pink. Add remaining taco seasoning, ketchup, and honey, and fry until caramelized.
  4. Chop tomatoes, onion, and jalapeño. Toss in a bowl with lime juice and minced cilantro. Add salt if needed.
