Ingredients

Directions

  1. Preheat the oven to 350°F.
  2. Heat olive oil in a saucepan over medium heat and sauté onions and peppers until tender, about 5 minutes.
  3. Add thawed spinach, garlic, chili powder, salt, oregano, thyme, and cayenne pepper to the sautéed vegetables and stir gently.
  4. Remove the saucepan from heat and set aside.
  5. Place the ground turkey in a large bowl.
  6. Add the whisked eggs and almond flour to the ground meat and mix with your hands, avoiding overmixing.
  7. Mix the sautéed vegetables into the meat mixture with your hands.
  8. Form the mixture into a loaf shape and place it in a loaf pan.
  9. Pour ketchup over the top and sides of the meatloaf.
  10. Bake for 60 to 75 minutes, until the internal temperature reaches 155°F.
  11. Remove from the oven and let it rest for about 10 minutes before slicing and serving.
