Directions
- Preheat oven to 350 degrees F.
- Start making the cauliflower crust by pulsing pieces of cauliflower in a food processor until the pieces are tiny and rice like. Pop your 'rice' into the microwave for 8 minutes so it can cook a bit before you put everything together. Set aside to cool.
- Once the cauliflower has cooled down, place it in between paper towels and press out as much moisture as possible. Mix together with the eggs and seasoning until well combined. Place mixture into muffin tin cups and shape to form bowls.
- Bake bowls for 25 minutes, pull out and fill with ingredients (pepperoni, sun dried tomatoes, mozzarella substitute, return to oven and bake for a further 10 minutes.
