Ingredients

Directions
- Grate the cheese, mince the garlic, chop the onion, and drain the kidney beans.
- Brown the minced beef in a pan over medium heat until cooked through, about 8-12 minutes. Add the onions, garlic, and peppers, and cook until softened, about 5-7 minutes. Remove form heat, mix in chili powder, tomatoes, and kidney beans. Leave to cool, whilst preparing other ingredients.
- Prepare rice as per package directions and then pour into a casserole dish.
- Cover the layer of rice with the beef/vegetable mix.
- Cover the beef/vegetable mix with the tortilla chips, and finally, cover with grated cheese,
- Bake in the oven for 45 minutes, cool for a few minutes, and serve. Enjoy!
