Directions

  1. Chop vegetables and ham. Add 1/2 oil to pan on medium-high heat. Cook bell peppers and onions until soft with ham and set aside, about 4 minutes.
  2. Add remaining oil and cook potatoes until golden brown. Add peppers, ham, and onions back to pan, and crack the four eggs. Cook mixture until eggs are done.
  3. Add salt and pepper / Herbes de Provence just as eggs are finishing, if desired.
