Directions
- Put the lentils into a bowl of water and soak for 15 minutes.
- Dice the onion. Chop the bacon into small pieces.
- Set a saucepan over medium heat. Add the bacon to the dry pan and cook until crispy. Add the onion to the bacon and sauté until translucent.
- Add the lentils, diced tomatoes, tomato juice, thyme, and vegetable broth. Cook for 25 minutes.
- Blend the soup in a blender or with an immersion blender. Add the red wine vinegar, and salt and pepper to taste
- Serve and enjoy!
